The best grapes for the best wines: starting from this principle Champagne Lasseaux intends to make a difference. Starting with the picking, Baptiste knowledge of the vines allows him to wait for the optimal maturity and choose the best grapes. This process continues during pressing, with an exclusive selection of the juices to prepare exceptional cuvées. As expressing the terroir is as one of the strong commitments of the house, the plots of Pinot and Chardonnay are pressed separately to reveal all their quintessence.

– 40 tanks from 40 hl to 300 hl (800 hl available for cooperative members out of a total of 2000 hl)
All the cuvées are vinified in stainless steel except for the Fût de Chêne cuvée which are matured in oak barrels.

– 16 of 228 liters, 6 of 400 litres, 6 “demi-muid” of 600 litres and finally 8 barrels of the “Tonnellerie de Champagne” – all created using oak trees from our village.

Self-taught in oenology, Baptiste is very determined and often pioneers ideas in the management of the different stages of winemaking. After the alcoholic fermentation which lasts a fortnight, the racking which assists malolactic fermentation, is guided by a strict thermal regulation. The cold transition, in particular, is currently carried out by testing out tangential filtration systems. Another example of trailblazing, a derivative of Solera (fractional blending) is also undertaken in vats for the Pole Position Brut.
